Nowadays, I am always in the look out for quick but healthy meals to prepare for days when I don't have the energy to cook. Having a family of my own, I have learned to stock up the fridge with plenty of quick to prepare foods, A.K.A. emergency foods, because lets face it, there will be days when you are just too tired to go shop for groceries or cook for that matter. In addition, foods outside are not the healthiest and can get expensive. Now, I am not talking about filling the fridge with frozen dinners, those aren't that healthy either. Think about meats and produce that you can store in the freezer for longer periods of time, and foods that have been pre-cooked or don't need much preparation.
For today's post, I am sharing with you a meal I put together within 25 minutes, with the "emergency foods" I had in the freezer: Roasted Garlic Mahi Mahi from Costco. The Mahi Mahi were individually wrapped and was already seasoned. The green beans and yellow peppers were actually fresh produce but any frozen packaged veggies will do just fine if you don't have any on hand. And for carb lovers, you can add white or brown rice.
On the package of the Mahi Mahi, the cooking options were to bake, grill or microwave. I chose to bake because it's less clean up afterwards. I also thawed the fish before cooking.
Instructions to bake:
Preheat oven to 375 F
Remove portions from pouch and place on baking sheet.
From Thawed: Bake 15-18 minutes in center rack of oven.
From Frozen: Bake 25-30 minutes in center rack of oven.
Veggies:
While the fish is being cooked in the oven, you can prepare the veggies. Simply place thawed veggies in a microwave safe dish, cover with a damp paper towel and cook on high for 1 minute. If frozen add 1 more minute.
Sauce for the veggies:
Mix soy sauce, sugar and a bit of Sriracha chili sauce together on a small bowl and pour over veggies.
There you have it! an easy, quick, healthy dinner made with what's already in your freezer.
let's hope Costco doesn't replace this excellent item with one of their nearly as good Kirkland substitutes.
